摘  要:研究了6种不同阻隔性能PET瓶对常温酸奶货架期品质的影响。通过透氧率和透光率指标评价6种PET瓶的阻隔性能。通过不同储存条件下,6种PET瓶产品的黏度、酸度、产品特征香气、整体接受度、口感黏稠度、氧化味以及塑料味变化情况间接对比了PET瓶的阻隔性能。结果表明,不同包材色母配料比及样品储存条件均对内容物有影响。其中,白色色母15%,紫色色母5%的PET包材阻隔方案对产品的保护性能最优。紫色色母主要影响瓶体阻氧性。白色色母主要用于屏蔽紫外线,还可以阻隔小部分氧气。此外,保温储存样品的黏度和酸度变化幅度最大,光照储存样品塑料味和氧化味变化最明显。Studied the effect of six different barrier properties of PET bottle?to the quality of ambient Yoghurt.Evaluate the barrier perfor?mance through oxygen and light permeability.Investigated the texture,,smell,variation of characteristics,aroma,overall acceptance,texture consistency,oxidation flavor,plastic flavor,viscosity and acidity changes of six packing products under different storage conditions.,.It shows that,packaging material and storage temperature affects the quality of the product.Among them,white masterbatch 15%and purple master?batch 5%for PET packaging,which shows the best barrier performance to the product.Purple masterbatch mainly affects the oxygen resis?tance quality.White masterbatch can screen ultraviolet rays and some oxygen.Besides,the most significant changes in viscosity and acidity were found in the thermal preservation samples,and the most obvious changes in the plastic and oxidizing flavors existed in light storage sam?ples.
