摘  要:研究从玉米面、花生、小米、大米、腐乳、葡萄、蓝莓、土壤等试验材料中筛选出10株高产蛋白酶霉菌菌株,对其进行了菌落观察和显微图像观察,选取蛋白酶产量较高的3株测定其蛋白酶、淀粉酶、脂肪酶产量,其中E29中3种复合酶活性较高,通过液体发酵测定了E29中3种复合酶活性,分别达到了307.33、42.26、8.65 U/mL。对菌株E29进行18S rDNA序列分析确定为紫红曲霉(Monascus purpureus)。这是国内首次报道筛选出同时产蛋白酶、淀粉酶、脂肪酶的红曲霉菌株,为进行新型饲养复合酶研究奠定基础。In the study, ten strains of protease-producing molds were screened from maize, peanut, millet, rice, fermented bean curd, grape, blueberry and soil, ect. The colony and micrographs were observed. Three strains with high protease yield were selected to determine the protease, the amylase and the lipase production. The activity of three complex enzymes of E29 was determined by liquid fermentation, which reached 307.33, 42.26 and 8.65 U/mL, respectively. And the 18S rDNA sequence of E29 was identified as Monascus purpureus. It is the first report in China that protease, amylase and lipase were isolated simultaneously from Monascus fungi. The test established foundation for the research of new feeding compound enzyme.
