摘 要:以更好地开发沈阳民族特色餐饮旅游市场且以弘扬沈阳民族旅游特色餐饮文化为出发点,采用文献研究法、问卷调查法和SWOT分析法调查了沈阳民族旅游特色餐饮的资源和市场,并分析了沈阳民族旅游特色餐饮资源和市场的优势、劣势、机遇和威胁。探究了消费者对沈阳民族旅游特色餐饮的满意度、认知度与服务质量评价。研究结果显示:民族旅游特色餐饮资源丰富的沈阳,具有巨大的发展前景;但游客普遍认为沈阳民族旅游特色餐饮服务质量一般,对沈阳民族旅游特色餐饮资源认知度较低。研究有助于规范沈阳民族旅游特色餐饮市场,且对提升沈阳民族旅游特色餐饮文化的知名度,对沈阳旅游业的可持续发展都有非常重要意义。In order to develop Shenyang ethnic tourism characteristic catering market better,and to carry forward Shenyang ethnic tourism characteristic catering culture as the starting point,the paper adopts the literature research method.The questionnaire survey and SWOT analysis were conducted to investigate the resources and markets of the catering industry in Shenyang ethnic tourism.The advantages,disadvantages,opportunities and threats of the unique catering resources and markets was also analyzed.This paper probes into the satisfaction of the consumers to the characteristic catering of Shenyang ethnic tourism,the recognition of the characteristic catering of Shenyang ethnic tourism,and the evaluation of the service quality of the characteristic catering of Shenyang ethnic tourism.The research results show that1)Shenyangwith ethnic tourism features,which is rich in food and beverage resources,has a great development prospect.2)Consumers generally think that the service quality of Shenyang ethnic tourism characteristics catering is general.3)Recognition of Shenyang ethnic tourism characteristic catering resources is low.The research will help to standardize and promote the characteristic catering market of Shenyang ethnic tourism,and promote the characteristic meal of Shenyang ethnic tourism.The popularity of drinking culture is of great significance to the sustainable development of tourism in Shenyang city.
