摘  要:以野生蕨菜为原料,采用热水浸提法,研究野生蕨菜中多糖及其抗氧化的能力。首先进行了单因素试验,然后运用响应面Box-Behnken设计野生蕨菜多糖的提取工艺,最后考察了其清除自由基的能力。结果表明:响应面优化野生蕨菜多糖的最佳条件为料液比1∶60 g/mL,回流温度83℃,回流时间3 h,提取率达到13.543 1%。野生蕨菜多糖有较强的清除DPPH自由基、羟自由基和超氧自由基的能力,且与浓度呈现明显量效关系,其清除三种自由基的IC50分别为1.439 4×10^-2mg/mL、0.367 4 mg/mL、0.66 mg/mL都低于对照品的浓度。因此山西野生蕨菜多糖提取工艺及其抗氧化活性的研究为其进一步开发利用具有重大意义。The aim of this study was to optimize hot-water extraction conditions of polysaccharides from wild Pteridium aquilinum and its radical scavenging capacity. On the basis of single factor test, response surface methodology was applied to optimize the main extraction conditions. The result showed that the optimized conditions were: solid/liquid ratio of 1:60(g/mL), extraction temperature of 83℃ and extraction duration of 3 h. Under these optimized conditions, the extraction yield of polysaccharide was 13.543 1%. The antioxidant results indicated that the scavenging effects of polysaccharide from wild Pteridium aquilinum on DPPH·,·OH and O2-·showed a positive correlation with the concentration of the polysaccharide extraction. The IC50 was respectively 1.439 4×10^-2 mg/mL,0.367 4 mg/mL, 0.66 mg/mL less than reference substance. The polysaccharide has high antioxidant activity, which will provide a theoretical basis for the study of the wild Pteridium aquilinum.
