摘 要:随着工业化进程的加快,工业生产形成的污染物对土壤和环境都造成了严重的影响,进而影响到人类的食品安全,其中以镉为代表的重金属污染日益突出。镉是一种可以在生物体内富集的有毒重金属,是仅次于黄曲霉毒素和砷的食品污染物,儿童作为昐感人群,镉暴露对其健康危害较大,近年来研究重金属污染对儿童生长发育的危害更是探讨的重点。本文对食品中镉污染的来源及其对人体特别是儿童带来的危害进行了综述,幵提出了防治措施,以期为改善镉对食品的污染、预防儿童镉中毒提供参考。With the acceleration of industrialization, the pollutants formed by industrial production have caused serious impacts on the soil and environment, thus affecting human food safety. The heavy metal pollution represented by cadmium is becoming more and more prominent. Cadmium is a toxic heavy metal that can be enriched in living organisms, cadmium poisoning is the second only food contamination of aflatoxin and arsenic. Children as a susceptible population, cadmium exposure is harmful to their health. So the study of the harm of heavy metal pollution to the growth and development of children in recent years is the focus of discussion. This paper reviewed the sources of cadmium pollution in food and its harm to human body, especially children, and put forward the prevention and control measures, in order to provide reference for improving the pollution of cadmium to food and preventing cadmium poisoning in children.
