摘　　要：在自然界中大豆含有比较丰富的蛋白质,高分子膜是制备大豆蛋白的有效方法之一。本文从高分子膜制备大豆蛋白的原理和方法、大豆分离蛋白膜法制备、乳清液中活性物质提取及大豆乳清废水处理与资源化几个方面进行阐述。Soybean contains the most abundant protein in nature,and polymer membrane is one of the effective methods for preparing soy protein.The paper introduces the application of polymer membrane in preparation of soy protein which contends the principle and method of preparing soy protein using polymer membrane,preparation of soy protein isolate by membrane method,extraction of active substance in whey solution,and treatment and resource utilization of soybean whey wastewater.
