摘 要:本文采用干法工艺生产一款营养全面,溶解性好的高钙营养蛋白质粉。重点研究了大豆分离蛋白的筛选,添加食品添加剂二氧化硅改善产品状态,研究碳酸钙预混工艺解决产品混合不均匀问题。结果表明,采用SUPRO 787大豆分离蛋白,0.6%二氧化硅,400目碳酸钙,并经过碳酸钙和全脂乳粉(1∶1)预混后,能够生产一款混合均匀、感官、营养、卫生指标均合格的高钙营养蛋白质粉。In this paper, a high calcium protein powder with comprehensive nutrition and good solubility was produced by dry process. The focus is on the study of screening of soy protein isolate, improving product status by adding silicon dioxide, researching calcium carbonate premixed process to solve the problem of uneven mixing of products. The results showed that SUPRO 787 soy protein isolate, 0.6% silicon dioxide, 400 calcium carbonate, and calcium carbonate and full fat milk powder(1∶1) were premixed, and a high calcium nutrient protein powder with uniform, sensory, nutritive and hygienic indexes could be produced.
