The effects of mung bean on lipid metabolism(TG,TC,LDL-C,HDL-C),liver lipid distribution and antioxidant enzyme activities(SOD,CAT,T-AOC)in rats fed with high-fat diet were investigated and evaluated, including the regulatory effects of mung bean on intestinal microflora and short-chain fatty acids(SCFAs)in rats fed with high-fat diet. The results showed that the addition of mung bean significantly reduced lipid accumulation in serum and liver and increased the activity of antioxidant enzymes,if compared with those of the high-fat diet group. The content of SCFAs in cecum of rats increased with the increase of mung bean dosage. The contents of cecum in rats were mainly Firmicutes and Bacteroidetes.Mung bean intake affected the abundance of intestinal microflora in rats, and the relative abundance of Bacteroidetes and Actinbacteria increased. These results indicated that the mung bean could improve intestinal microorganisms, regulate lipid metabolism and had a significant protective effect on the body.
