摘 要:玉米皮作为清洁易得的农产品下脚料,是开发食品组分的丰富资源,其中富含功能性非淀粉多糖--阿拉伯木聚糖(arabinoxylans,AXs)。以鲜玉米麸皮为主要原料,采用复合酶法提取其中的阿拉伯木聚糖。以提取率和提取物中AXs含量为指标,研究复合酶中的木聚糖酶和纤维素酶的比例和复合酶的添加量对得率和提取物中AXs含量的影响。结果表明木聚糖酶与纤维素酶添加量之比为10∶1(酶活比),复合酶的添加量为900 U/g时提取率和提取物中AXs含量最高。Corn fiber is one of the most abundant and clean byproduct of agricultural products,which arouse interest for finding more valuable products for the manufacture of food ingredients from it.The main non-starch polysaccharide of maize bran is arabinoxylans(AXs).In this study fresh corn fiber was used as material,xylanase was selected to composite with cellulase to increase the extraction yield of AXs.The effects of xylanase to cellulase ratio and the double-enzyme dose on the extraction yield and the AXs content in the extract were studied.The results showed that when xylanase to cellulase ratio was 10∶1(U/U),the double-enzyme dose was 900 U/g,the extraction yield and the AXs content in the extract were the highest.
