摘　　要：高效液相色谱法因具有高速、高效、高灵敏度等优点成为了许多科学领域中重要的分离技术,也是白酒中许多物质分析和检测常用的一种方法。本文总结了高效液相色谱法在白酒中酸类化合物、酯类化合物等各类物质中的分析应用。High performance liquid chromatography(HPLC)has become an important separation technique in many scientific fields due to its advantages such as high speed,high efficiency,and high sensitivity etc.It is also a common method for the analysis and detection of many substances in Baijiu.In this paper,the application of HPLC in the analysis of acid compounds,ester compounds and other substances in Baijiu was reviewed.
