摘 要:食品工艺实验教学是食品工艺学教学中重要的实践性教学环节。为提高食品工艺学实验课的教学质量,采用开放性实验教学模式,加强实验网络平台建设,实验教学内容与市场需要紧密联系,提高实验室利用率,改进实验考核方法等教学措施进行改革。实施开放式教学,得到教师的普遍认同,这种教学方法以学生为主体,培养学生主动探究的学习能力,提高了学生综合实验技能、动手能力和创新精神。Food technology experiment teaching is an important practical teaching link in food technology teaching. In order to improve the teaching quality of the food technology experiment class,the open experimental teaching mode is adopted,the experimental network platform is strengthened,the experimental teaching content is closely related to the market needs,the laboratory utilization rate is improved,and the experimental evaluation method is improved. The implementation of open teaching has been widely recognized by teachers. This teaching method is based on students,cultivating the learning ability of students to actively explore,and improving students’ comprehensive experimental skills,hands-on ability and innovative spirit.
