摘  要:右旋糖酐蔗糖酶是一种主要由肠膜明串珠菌分泌获得,能以蔗糖为底物合成右旋糖酐的葡萄糖基转移酶。在右旋糖酐的合成中,酶合成法相比菌种发酵法具有高效连续生产、产物易分离等优点,因此对右旋糖酐蔗糖酶的深入研究将有助于提升酶法合成右旋糖酐、低聚糖等产物的效率和可行性。文章以右旋糖酐蔗糖酶为中心点,综述了其催化机理、纯化方法、生产改造和应用研究进展,并阐述了基因工程、双酶联用等技术对该酶功能的优化,最后针对目前仍存在的问题及未来的研究方向进行了总结。Dextransucrase is a kind of glucosyltransferase which can synthesize dextran using sucrose as the substrate,it's mainly secreted by Leuconostoc mesenteroides.In the synthesis of dextran,the enzyme synthesis method has the advantages of efficient continuous production and easy separation of products compared with strain fermentation method.Therefore,the in-depth study on dextransucrase will help to improve the efficiency and feasibility of enzymatic synthesis of dextran,oligosaccharide and other products.Focus on the dextransucrase,this paper reviews the research progress of its catalytic mechanism,purification methods,production,modification and application,discusses the optimization of the functions of genetic engineering and double-enzyme combination and other technologies on the enzyme,finally,summaries the existing problems and future research directions.
