摘 要:目的了解绍兴市越城区食品中主要化学污染物和有害因素的污染水平和趋势,及时发现食品安全隐患并确定危害因素的分布和可能来源,为采取相应的风险管控和监管措施提供科学依据。方法从绍兴市越城区不同地点食品流通环节购买食品样品,按照《食品安全国家标准》和《国家食品污染物和有害因素风险监测工作手册》等的相关检验方法进行检测分析。结果共检测食品类样品427份,其中合格398份,合格率为93.21%;不合格样品和指标主要为梭子蟹蟹黄中的镉、即食海蜇中的铝、螺蛳、花蛤和蛏子中的砷、笋干中的二氧化硫残留和黄豆中的铬。结论绍兴市越城区2018年食品中主要化学污染物和有害因素指标的合格率较高,但部分食品仍存在较高的安全风险,应采取针对性措施进一步加强重点环节监管,确保本区食品安全。Objective To investigate the pollution level and the trend of main chemical pollutants and the harmful factors in food in Yuecheng district of Shaoxing City,and to timely identify the distribution and possible sources of harmful factors,so as to provide scientific basis for taking effective control measures.Methods Food samples were purchased from the food circulation links in different locations in Yuecheng District of Shaoxing City.All the samples were detected and analyzed according to National Standards for Food Safety and Handbook of Food Safety Risk Monitoring.Results A total of 427 food samples were detected,and 398 samples were qualified with the qualified rate of 93.21%;the unqualified samples and indexes were mainly cadmium from crab yellow,aluminum from instant jellyfish,arsenic from snails and clams,sulfur dioxide residue from dried bamboo shoots and chromium from soybean.Conclusion The qualified rates of main chemical pollutants and harmful factors in food in Yuecheng District of Shaoxing City were high in 2018,but some food still had a higher security risk.Specific measures should be taken to ensure the food safety in our city.
