摘 要:建立黄酒发酵醪液(固液混合物)中生物胺的检测方法并测定绍兴某黄酒厂发酵醪液的生物胺含量。结果显示,8种生物胺的检出限为0.187μg/L^0.35μg/L,定量限为0.323μg/L^1.06μg/L,且在0.5μg/L^20μg/L范围内具有良好的线性关系。8种生物胺在黄酒发酵醪液样品中的平均回收率为95.31%~105.22%,相对标准偏差在3.21%~9.87%,均小于10%,符合国家标准中残留检测要求。在黄酒发酵醪液中,8种生物胺均能检出,总生物胺的范围是151.02 mg/L^181.48 mg/L,其中腐胺和酪胺是主要的生物胺。The method for analyzing biogenic amines in fermented mash of yellow rice wine(solid-liquid mixture)was established. And the biogenic amine content of fermented mash of yellow rice wine from Shaoxing was determined. The results showed that the detection limits of the eight kinds of biogenic amine were 0.187 μg/L-0.35 μg/L. The limit of quantification was 0.323 μg/L-1.06 μg/L. And the linear relationship was good in the range of 0.5 μg/L-20 μg/L. The average recoveries of the eight kinds of biogenic amine in the yellow rice wine fermented mash samples were 95.31 %-105.22 %,and the relative standard deviations were 3.21 %-9.87 %,all of which were less than 10 %. All of the parameters meet the requirements of residue detection in national standards.In the yellow rice wine fermented mash samples,the range of total biogenic amines were151.02 mg/L-181.48 mg/L. Among the 8 kinds of biogenic amines detected,putrescine and tyramine were the main biogenic amines.
