摘 要:[目的]深入了解果实采后软化的影响因素及抑制果实软化的保鲜技术。[方法]对国内外相关文献进行归纳总结。[结果]综述了果实采后软化的影响因素,包括细胞壁代谢、淀粉代谢、能量代谢、激素和病原菌侵染等,并探讨了抑制果实采后软化的物理、化学和生物技术。[结论]应结合分子生物学、材料科学等深入研究果实软化机理,并研发抑制果实软化的新技术。[Purpose] To deeply understand the influencing factors of postharvest fruit softening and the techniques of fruit softening inhibition. [Method] A comprehensive review was conducted through reading a large number of domestic and foreign literature. [Result] The influencing factors of postharvest fruit softening including cell wall metabolism, starch metabolism, hormone metabolism, energy metabolism, hormone, and pathogen infection. The physical, chemical and biological technologies that inhibit postharvest fruit softening are discussed. [Conclusion] Molecular biology, materials science, etc. should be combined to investigate the mechanisms of postharvest fruit softening in depth and to develop new technologies for inhibiting postharvest fruit softening.
