摘 要:为减缓柚子籽油(PSO)中含量较高的不饱和脂肪酸的氧化、保护其活性成分柠檬苦素,本文通过β-环糊精饱和水溶液法将PSO微胶囊化,对PSO微胶囊化产品(PSO-MEs)的理化性质、微观形貌和稳定性进行了分析。结果表明:PSO中柠檬苦素含量为327.6μg·g^-1,不饱和脂肪酸占66.28%,主要是C18:2(35.92%)和C18:1(26.38%);PSO-MEs的包埋率为(92.18±0.54)%,载油量为(74.32±0.44)%,平均粒径为1.58μm;扫描电镜图显示PSO-MEs外观形貌近似球形,表面有轻微凹陷。通过方程拟合发现PSO和PSO-MEs的氧化动力学与Boltzmann方程拟合度最高并且PSO-MEs的热稳定性和氧化稳定性显著强于PSO。20℃下,利用Van’t Hoff经验公式推测PSO-MEs的货架期约为130 d,较未包埋的PSO延长了4.5倍。实验结果可为柚子籽油产品开发提供参考。In order to decrease the oxidation rate of unsaturated fatty acids and protect the bioactive component(limonin)in pomelo seed oil(PSO),microencapsulation of PSO(PSO-MEs)were prepared usingβ-cyclodextrin by the saturated aqueous solution method.The microstructure,physicochemical property and stability of PSO-MEs were investigated.The results showed that the limonin content was 327.6μg·g^-1 and the unsaturated fatty acids(UFAs)accounted for 66.28%,which mainly contained C182(35.92%)and C181(26.38%).The encapsulation efficiency and oil loading capacity of PSO-MEs were(92.18±0.54)%and(74.32±0.44)%,respectively.The PSO-MEs were approximately spherical with slightly hollow surface in shape with mean particle size of 1.58μm.It was found that the oxidation kinetics of PSO and PSO-MEs were both best fitted with Boltzmann equation,and the thermal and oxidative stability of PSO were significantly improved by microencapsulation.The shelf life of PSO-MEs calculated by Van’t Hoff equation was about 130 days at 20℃,which was 4.5 times longer than that of PSO.This experiment can provide potential application for pomelo seed oil products.
