摘  要:目的评估食品中氯丙醇酯的健康风险。方法通过GC-MS方法测定植物油、方便面、油条油饼、麻花、焙烤食品中氯丙醇脂含量,在此基础上,以PMTDI百分比评估摄食此类食品可能导致的健康风险。结果3-MCPD酯为未检出~5.20 mg/kg,中位数0.262 mg/kg,2-MCPD酯为未检出~4.390 mg/kg,中位数0.261 mg/kg,各个年龄的人群暴露评估的结果表明,3岁~8岁儿童暴露方便面中氯丙醇酯3-MCPD酯风险PMTDI百分比在101%~161%,3岁~5岁儿童暴露于油条油饼中3-MCPD酯的风险PMTDI百分比在141%~148%,3岁~11岁高端消费人群摄入植物油、方便面、油条油饼、麻花食品暴露于2种氯丙醇酯的风险PMTDI百分比在27%~511%,特别是3岁~5岁儿童暴露于植物油、方便面、油条油饼的风险PMTDI百分比在170%~511%,各年龄人群对焙烤食品风险PMTDI百分比均<100%。结论儿童食用上述食品有不同程度健康风险,应减少摄入量和摄入频率来降低氯丙醇酯的健康风险。Objective To estimate the potential health risk of chloropropanol esters to people at different ages.Methods The contents of chloropropanol esters are determined in foods including vegetable oil,instant noodles,dough stick and pancake,dough twist and baked food by gas chromatography-mass spectrometry,on the base of which the health risks are assessed with the percentage of PMTDI.Results The contents of 3-MCPD esters range from n.d to 5.20 mg/kg and 2-MCPD esters from n.d to 4.390 mg/kg.The mean contents of 3-MCPD esters and 2-MCPD esters in foods are 0.262 mg/kg and 0.261mg/kg,respectively.The results of the exposure assessment for all age groups suggested that the percentage of PMTDI of 3-MCPD esters among 3-8 years exposed to instant noodles is within 101%-161%,141%-148%for children aged 3-5 years exposed to 3-MCPD esters of dough stick and pancake,and then the percentage of PMTDI of 3-MCPD esters and 2-MCPD esters is within 27%-511%for children aged 3-11 years who are high consumers of vegetable oil,instant noodles,dough stick and pancake,dough twist.Especially the percentage of PMTDI of 3-MCPD esters and 2-MCPD esters is up to 170%-511%from children aged 3-6 years who are high consumers of vegetable oil,instant noodles,dough stick and pancake.The percentage of PMTDI is relatively low(<100%)for children of different age exposed to baked foods.Conclusion According to the estimated exposure assessment results,there is a high health risk to a degree associated with the intake of 3-MCPD esters and 2-MCPD esters from vegetable oil,instant noodles,dough stick and pancake,dough twist for children.In order to reduce the health risks,they may reduce consumption of those foods to further reduce the exposure to chloropropanol esters.
