摘  要:基于工程教育专业认证理念,围绕培养食品工业技术人才的目标,针对“食品添加剂”课程在教学中存在的实际问题,从教学内容、教学方法、教学手段、考核方式等方面对“食品添加剂”课程进行了教学改革探讨,提高“食品添加剂”课程的整体教学质量,调动学生自主学习热情,培养学生分析问题和解决问题的能力,不断提升食品专业人才的培养质量,使其服务于社会的发展和进步。This paper focused on the talent cultivation based on engineering education accreditation,and a series of practical problems about teaching existed in Food Additive course.The course teaching reform measures were carried out,mainly containing the aspects of teaching content,teaching methods,assessment methods and other aspects.The aim was to improve the overall teaching quality of the Food Additive,stimulate students'enthusiasm for learning and expression ability and develop students'professional ability to analyze and solve problems.Thus,food professional-talents with improved comprehensive quality has been formed,which could better serve the social development.
