摘 要:为了探究温度对青稞储藏品质的影响,为青稞储藏提供数据支持,本文对不同储藏温度下青稞的理化品质变化进行了研究,并对青稞和糙米进行了实仓试验。结果表明:温度会影响青稞储藏品质,高温会加速青稞的陈化,低温储藏有利于减缓青稞脂肪酸值的升高,保持种子发芽率;由青稞和糙米在低温库下的储藏结果可知,青稞的储藏稳定性要好于糙米。To explore the influence of temperature on highland barley storage quality,and provide data for the storage of highland barley,this paper studied the physical and chemical qualities of highland barley under different temperature.Besides,highland barely and brown rice were tested in real storehouse.The results showed that temperature would affect the storage quality of barley.The high temperature would accelerate the aging of barley,and low temperature would slow the rise of fatty acid,keep the seed germination rate;The results also showed that the storing stability of highland barley is better than that of brown rice.
