摘 要:食品新鲜度是食品质量最重要的品质特征.实验制备出了指示短期预包装食品新鲜度的变色标签材料,它可通过标签颜色的变化来显示食品新鲜度.该标签可于预包装食品外部指定位置粘贴使用,并可与新鲜度比色条对照观察,从而方便消费者直观判断、掌握食品动态质量.实验基于淀粉遇碘显色的变色标签材料体系,研究了标签材料制备的工艺与条件,测定了标签材料颜色变化与时间的关系,分析了不同贮藏时间、贮藏温度对标签颜色的影响,讨论了不同贮藏条件下标签材料显色反应速度的关联性以及低温贮藏的意义.整个反应阶段标签材料颜色从浅青色变为棕红色.研究结果表明,该食品新鲜度变色标签是一种时间变量标签;常温、冷藏、冷冻等不同贮藏条件下标签色度值ΔE均呈现出由快速到缓慢的对数型变化趋势;标签色度值与时间-温度的关系可用关联方程组清晰表达.碘-淀粉系统标签在室温下颜色变化明显,可用于短期预包装食品室温下10天的新鲜度指示.Food quality is usually evaluated by food freshness.In this study,a colorimetric label material for indicating the freshness of short-term prepackaged food was developed,which can show the freshness of food by the color change of the label.The label can be pasted at the designated location of prepackaged foods for monitoring food freshness,and it make the judgment and mastery of food dynamic quality easier for consumers by contrast with the freshness color bar.In this paper,the color change label material system was based on the conventional starch-iodine color reaction.This study includes the preparation process and conditions of colorimetric label material,the relationship between color and time of label material,the effect of different storage time and temperature on label material,the correlation of reaction rate of label materials under different storage conditions and the significance of low temperature storage.The color of label materials changed from light cyan to brownish red throughout the reflection stage.The results show that the food freshness indicator label is a time variable label,its color-change value shows logarithmic trend under different temperature,the relationship between color and time-temperature can be clearly expressed by the associated equations.In particular,it displayed a clearly color change to reflect the dynamic quality of food in normal temperature conditions.
