摘  要:为了解决传统气调保鲜技术在物流运输中难以应用的问题,研究了O2/CO2主动自发气调(AMAP)对西兰花活性氧代谢以及保鲜效果的影响。试验设计初始O2/CO2体积比例分别为60%O2+40%CO2、70%O2+30%CO2、80%O2+20%CO2、90%O2+10%CO2和自然空气(CK)5个处理,充气量约为西兰花体积的3.5倍,对10℃贮藏条件下密封箱内O2和CO2含量、西兰花的活性氧代谢以及品质指标进行定期测定。结果表明:70%O2+30%CO2 AMAP的密封箱内O2、CO2可迅速平衡,并提高SOD、POD酶活性,降低O■、H2O2含量及MDA积累,延缓西兰花叶绿素和VC含量的下降;而其他比例的O2/CO2 AMAP在不同阶段均产生较高的活性氧和MDA含量。本研究可作为西兰花物流运输过程中AMAP保鲜参数的理论依据。In order to solve the problem that traditional controlled atmosphere storage technology was difficult to apply in logistics transportation, this paper studied the effect of O2/CO2 active modified atmosphere packaging(AMAP) on reactive oxygen species metabolism and storage quality of broccoli. The initial O2/CO2 volume proportions of 60% O2+40% CO2, 70% O2+30% CO2, 80% O2+20% CO2, 90% O2+10% CO2 and natural air(CK) were used in this study,gas was approximately 3.5 times the volume of the broccoli. During 10 °C storage, the O2 and CO2 contents in the sealed container, the reactive oxygen species metabolism of broccoli and the quality indicators were periodically measured. The results showed that 70%O2+30% CO2 treatment can accelerate the rapid balance of O2 and CO2 in the sealed container, increas the activity of SOD and POD, decreas the contents of O■, H2O2 and MDA, and delay the decrease of chlorophyll and VC contents of broccoli. Other O2/CO2 treatments exhibited the higher levels of reactive oxygen species and MDA at different stages. This study could provide the theory of AMAP storage parameters during logistics transportation.
