摘  要:【目的】评价不同清洗剂对鲜切黄瓜的清洗效果。【方法】选用5种清洗剂对鲜切黄瓜进行清洗试验,在杀菌效果同为90%的清洗条件下,对比不同清洗剂对鲜切黄瓜生理指标以及货架期菌落总数的影响。【结果】各清洗剂杀菌效果达到90%时的清洗条件分别为:5%柠檬酸(C6H8O7)清洗5 min、250 mg/L(有效氯质量浓度)次氯酸钠(NaClO)清洗10 min、50 mg/L液态二氧化氯(Liquid ClO2)清洗15 min、150 mg/L(有效氯质量浓度)氯化酸性电解水(Chlorinated acid electrolyzed water,CAEW)清洗5 min和200 mg/L过氧乙酸(CH3COOOH)清洗15 min。与对照组相比,柠檬酸(C6H8O7)使鲜切黄瓜叶绿素含量降低13.6%;次氯酸钠(NaClO)清洗后的鲜切黄瓜叶绿素与抗坏血酸分别减少11.5%和13.9%;液态二氧化氯(Liquid ClO2)处理后,叶绿素、抗坏血酸、细胞渗透率、可溶性蛋白和丙二醛分别改变24.8%、20.6%、14.7%、4.9%和9.6%;氯化酸性电解水(CAEW)使叶绿素、细胞渗透率、可溶性蛋白与丙二醛分别改变19.3%、11.4%、12.8%和8.6%;过氧乙酸(CH3COOOH)仅使抗坏血酸和可溶性蛋白分别减少8.5%和9.8%。【结论】过氧乙酸(CH3COOOH)比相同质量浓度的次氯酸钠(NaClO)的杀菌效果好,对鲜切黄瓜生理指标影响小,且能够显著抑制货架期菌落总数的增长。【Objective】 Five different washing agents were used to evaluate the sterilization effect on fresh-cut cucumber. 【Methods】 90% sterilization effects were employed for the conditioning of washing agents, the bacterial colonies and physiological indexes of fresh-cut cucumber on shelf-life were measured. 【Results】 The washing conditions of the washing agents when sterilization effect reached 90% were: 5% citric acid(CA)for 5 min,250 mg/L(available chlorine) sodium hypochlorite(SH) for 10 min,50 mg/L liquid chlorine dioxide(LCD) for 15 min, 150 mg/L(available chlorine) chlorinated acid electrolytic water(CAEW) for 5 min and 200 mg/L peroxyacetic acid(PA) for 15 min. Compared with the control group, CA reduced the chlorophyll content of fresh-cut cucumber by 13.6%. The contents of chlorophyll and ascorbic acid with SH were reduced by 11.5% and 13.9%, respectively. The levels of chlorophyll, ascorbic acid, cell permeability, soluble protein and malondialdehyde with LCD changed by 24.8%, 20.6%, 14.7%, 4.9% and 9.6%, respectively,chlorophyll, cell permeability, soluble protein and malondialdehyde with CAEW changed by 19.3%,11.4%, 12.8% and 8.6%, respectively,ascorbic acid and soluble protein with PA reduced by only 8.5% and 8.6%, respectively. 【Conclusion】 PA showed a stronger sterilization effect than SH at the same concentration, less harmful effect on physiological indexes of fresh-cut cucumber, and significantly inhibit on the growth of bacterial colonies in shelf life compared to the other washing agents.
