摘　　要：赤藓糖醇属填充性食品甜味剂,具有良好的功能特性。从结构、性质、生产工艺、应用等4个方面阐述了赤藓糖醇的国内外研究现状。Erythritol was a kind of filling food sweetener with good functional properties.The research status of erythritol at home and abroad from the aspects of structure,property,production technology and application was reviewed.
