摘  要:食品甜味剂是常用添加剂之一,在食品生产中有改善味道、提高食品安全、推动食品工业发展等方面有诸多作用。本文针对食品甜味剂的应用进行分析,首先介绍甜味剂,了解作为食品添加剂的作用与结构,随后介绍天然提取类甜味剂、化学合成类高倍甜味剂这两种常用食品甜味剂,并且阐述光谱法、电化学法、色谱法和质谱联用法4种甜味剂技术,提高食品甜味剂检测能力,检测方案更加完善,以期能够为今后食品甜味剂的应用提供有价值的参考。Food sweetener is one of the commonly used additives, which has many functions in improving taste, improving food safety and promoting the development of food industry. This paper analyzes the application of food sweeteners. Firstly, the sweeteners are introduced to understand the function and structure as food additives. Secondly, two kinds of commonly used food sweeteners, natural extraction sweeteners and chemical synthesis high power sweeteners, are introduced. Four kinds of sweetener technologies, spectral method, electrochemical method, chromatography and mass spectrometry, are described to improve the detection ability and detection of food sweeteners The test plan is more perfect, in order to provide valuable reference for the application of food sweeteners in the future.
