2014-2018年陕西省宝鸡市市售肉及肉制品致病菌风险监测结果分析

摘　　要：目的了解宝鸡市市售肉及肉制品的致病菌污染状况。方法2014-2018年在宝鸡市9县3区随机抽取超市、农贸市场、餐饮店等食品流通环节的5类肉及肉制品396份,按照国家《食品安全风险监测网工作手册》中规定的方法,采集和检验食品样品。结果样品的阳性检出率为19.95%(79/396),各类肉及肉制品的致病菌阳性检出率由高到低依次为:调理肉制品57.58%、冷冻肉糜制品28.00%、生禽肉18.00%、生畜肉17.14%、熟肉制品12.78%。主要致病菌为单核细胞增生李斯特菌、金黄色葡萄球菌和沙门氏菌,蜡样芽孢杆菌、小肠结肠炎耶尔森氏菌、志贺氏菌均未检出。结论2014-2018年宝鸡市市售肉及肉制品连续5年一直存在食源性致病菌的污染,建议从各方面加强肉及肉制品卫生生产和食用。Objective To know the contamination condition of pathogenic bacteria in meat and meat products sold in the market of Baoji.Methods From 2014 to 2018,a total of 396 samples of 5 kinds of meat and meat products were randomly collected form supermarkets fairs eatery and other food circulation links at 9 counties and 3 districts of Baoji.And the food samples were normatively collected and tested by the way regulated in China Food Safety Risk Monitoring Work Book.Results Of all the samples,the overall bacteria positive detection rate was 19.95%(79/396).All the positive rates(from high to low) of different kinds of meat and meat products were 57.58% in processed meat products,28.00% in frozen minced meat products,18.00% in raw poultry meat,17.14% in raw livestock meat,and 12.78% in cooked meat products.The main pathogens were Listeria monocytogenes,Staphylococcus aureus,and Salmonella.Bacillus cereus,S enterocolitis,and Shigella were not detected.Conclusion The contamination of pathogen in meat and meat products of Baoji existed during the latest 5 years.We suggest strengthening hygienic production and consumption of meat and meat products in all directions.
