摘　　要：水稻是我国第一大农作物,稻谷储藏是产后减损的关键环节,不仅影响储粮的数量安全,还影响着储粮的质量安全。综述了常用的稻谷储藏品质评价指标及其影响因素,及目前粮企、农户主要储粮控制措施,并对今后稻谷食味性及农户储藏稻谷的研究方向进行了展望。Rice is the biggest crop in China.Rice’s storage is the key point to reduce the postharvest loss,which affect the quantity safety of stored rice as well as the quality safety of stored rice. This paper summarized the commonly used evaluation index of rice storage quality, and the main rice storage control measures of grain enterprises and farmers at present, and prospected the research direction of rice storage by farmers in the future.
