摘 要:目的了解广州市米制品中18种元素的含量,对本地居民进食米制品的营养素摄入和重金属污染物暴露水平进行评估。方法采集2018年广州市售米制品120份,使用电感耦合等离子体质谱法测定18种元素含量,对10种膳食营养素摄入进行评价分析,对6种重金属污染物进行膳食暴露评估。结果 18种元素含量为干米粉:0. 001 5 mg/kg^482 mg/kg,湿沙河粉:0. 000 8 mg/kg^140 mg/kg。干米粉中各元素含量普遍高于湿沙河粉,6种重金属的合格率均为100%。Ca等6种营养素的日摄入量均小于可耐受最高摄入量,日摄入量为干米粉:2. 8μg/d^27 mg/d,湿沙河粉:0. 6μg/d^8. 5 mg/d。Cr的风险最高,Cd次之,Ni、总As较低,总Hg、Pb的风险极低。结论电感耦合等离子体质谱法适用于食品中多种元素的同时测定。广州居民若每日单纯进食米制品,10种营养素的摄入量远不及参考摄入量。6种重金属的膳食暴露水平均在安全范围,存在风险均可接受。Objective To understand the contents of 18 elements in rice products in Guangzhou,and to evaluate the nutrient intake and exposure level of heavy metal pollutants in rice products eaten by local residents. Methods A total of 120 samples of rice products were collected in Guangzhou in 2018. The contents of 18 elements were determined by inductively coupled plasma mass spectrometry( ICP-MS). The intakes of 10 dietary nutrients were analyzed and the dietary exposure of 6 heavy metal pollutants was evaluated. Results The contents of 18 elements ranged from 0. 001 5 mg/kg to 482 mg/kg in dry rice noodles and 0. 000 8 mg/kg to 140 mg/kg in wet Shahe noodles. The contents of elements in dry rice noodles were generally higher than that in wet Shahe noodles,and the qualified rates of six heavy metals all were 100%. The daily intakes of 6 nutrients such as calcium were less than the tolerable upper intake level( UL). The daily intakes of dry rice noodles were within2. 8 μg/d-27 mg/d,and that of wet Shahe noodles were within 0. 6 μg/d-8. 5 mg/d. The risk of chromium was the highest,followed by cadmium,nickel and arsenic was lower,and mercury and lead were the lowest. Conclusion ICP-MS was suitable for simultaneous determination of various elements in food. The intakes of 10 nutrients were far less than the dietary reference intakes( DRIs) if the residents in Guangzhou simply eat rice products every day. The dietary exposure levels of 6 heavy metals were all within the safe range and the existing risks are acceptable.
