摘　　要：牡丹花作为新食品原料,营养丰富,并富含黄酮类、多酚类活性物质,广泛应用于食品、饮料及化工行业。阐述了近年来国内外对牡丹花食药成分及加工方面的的研究现状,以期带动牡丹产业的良性循环和可持续性发展。Peony flower is rich in nutrients and active substances such as flavonoids and polyphenols as a new food raw material,which was widely used in food,beverage and chemical industry.In this paper,the research status of food and drug composition and processing of peony flowers at home and abroad in recent years was described,in order to promote the sound and sustainable development of peony flower industry.
