摘 要:采用索氏提取法测定了8大类市售坚果产品的脂肪含量,比较了不同配料和加工方式与产品脂肪含量的相关性,并对其膳食油脂提供量进行了分析。结果表明,无壳坚果产品的平均产品脂肪含量为42.63%,核桃仁的脂肪含量最高(平均为60.94%);带壳的坚果产品的平均产品脂肪含量为23.23%,碧根果的产品脂肪含量最高,为33.92%。油炸、添加植物油的坚果籽仁和产品的脂肪含量较高;添加白砂糖、小麦粉等配料的产品脂肪含量较低。基于我国居民膳食指南和膳食调查,我国18~49周岁的中体力活动水平的居民对不同坚果产品的每日摄入量为:男性和女性分别摄入葵瓜子36 g和29 g、西瓜子37 g和30 g、南瓜子31 g和25 g、无壳花生26 g和21 g、带壳花生28 g和23 g、无壳核桃11 g和和9 g、带壳核桃23 g和19 g、碧根果20 g和16g、松子28 g和23 g、开心果29 g和23 g、带壳大杏仁41 g和33 g、无壳大杏仁12 g和10 g、腰果15 g和12 g时,可基本满足不饱和脂肪酸供能占机体总能量需求量为20%。The fat content of 8 kinds of commercial nut products was determined by Soxhlet extraction method.The correlation between the fat content and different ingredients and processing methods was compared and analyzed,and the daily dietary fat intake was analyzed,as well.The results showed that the average fat content of nut products without shell was 42.63%,and the average fat content of walnut kernel was the highest(60.94%),the average fat content of nut products with shell was 23.23%,and that of Bigen fruit was the highest(33.92%).Also,the fat content of nut seed kernel and products added with frying and vegetable oil ingredients is higher,while that of products added with sugar and wheat flour ingredients is lower.Based on the dietary guidelines and dietary survey of Chinese residents,it is recommended that the daily intake of different nut products for the residents aged 18-49 years old with middle physical activity level in China is as follows.?The recommended daily intake for men and women is 36g and 29g of sunflower seeds,37g and 30g of watermelon seeds,31g and 25g of pumpkin seeds,26g and 21g of peanut without shell,28g and 23g of peanut with shell,11g and 9g of walnut without shell,23g and 19g of walnut with shell,20g and 16g of Bigen fruit,28g and 23g of pine nuts,29g and 23g of pistachio fruit,41g and 33g of almond with shell,12g and 10g of almond without shell,15g and 12g of cashew fruit,which can meet the energy demand of unsaturated fatty acids for 20%of the total energy.
