白酒中硅藻土助滤剂金属离子迁移量探讨

摘　　要：采用电感耦合等离子体质谱仪(ICP-MS)分别对硅藻土和硅藻土白酒浸泡液进行Na、Mg、Al、K、Ca、Fe、Ti、V、Mn、Co、Ni、Cu、Zn、Se、Sr、Mo、Cd、Sn、Sb、Ba、Pb 21种金属元素的测定分析,结果表明,酒用硅藻土中Na、Mg、Al、K、Ca、Fe、Ti、V、Mn、Zn、Ba的实际含量较高。而硅藻土在白酒使用过程中的迁移量却很少,认为硅藻土助滤剂对白酒的食品安全风险低。In this study, inductively coupled plasma mass spectrometry(ICP-MS) was used to study the content of Na, Mg, Al, K, Ca,Fe, Ti, V, Mn, Co, Ni, Cu, Zn, Se, Sr, Mo, Cd, Sn, Sb, Ba, and Pb in diatomite and in diatomite-treated Baijiu. The results showed that the content of Na, Mg, Al, K, Ca, Fe, Ti, V, Mn, Zn and Ba in diatomite was high. However, the migration of metal elements in diatomite in the filtering process of Baijiu is very small, and the diatomite filter aid is considered safe for the use in Baijiu production.
