摘　　要：中古时期,鱼是北方地区最常见的海产品,也是北方民众常食的肉食之一。中古时期北方良好的水环境为人们提供了丰富的鱼类资源,在长期的鱼类食用过程中,北方民众们总结出了各种各样的鱼类烹饪与加工方法,显示了我国古代饮食文化较高的发展水平。In the Middle Ancient Age,fish was the most common seafood in North China and one of the commonly eaten meats in the North.Good water environment provided people with rich fish resources.In the long-termconsumption of fish,people in North China had summed up a variety of fish cooking and processing methods,showing the high level of development of ancient Chinese food culture.
