摘 要:金属元素能够促进油脂的氧化,引起饲料酸败变质。试验选择畜禽饲料中常用的硫酸亚铁、富马酸亚铁和甘氨酸铁三种微量元素原料,模拟实际生产中8%仔猪预混料中油脂与微量元素的添加量,将三种铁离子与大豆油的比例设定在91000,乳化后将三种铁离子与大豆油混合,在广东夏季(6~9月)高温高湿条件下,将混合后的油脂在避光和密封的条件下储放0、10、20、30、40、50 d和60 d,检测各处理组的酸价、碘价、过氧化值和丙二醛含量。试验共设4个处理组,分别为对照组(大豆油中不加铁离子)、硫酸亚铁组(100 g大豆油中添加2.45 g一水硫酸亚铁)、富马酸亚铁组(100 g大豆油中添加2.73 g富马酸亚铁)、甘氨酸铁组(100 g大豆油中添加3.28 g甘氨酸铁)。每个处理3个重复,试验期60 d。研究结果表明,随着存储时间的延长,三种形式铁离子组的酸价变化不大,丙二醛含量大幅度增加,碘价降低明显,过氧化值呈现先增加后降低的趋势,且增长幅度较大。在60 d的存储期内,甘氨酸铁组的酸价变化不大,过氧化值高而丙二醛含量低,说明甘氨酸铁组还处于油脂氧化的初始阶段。硫酸亚铁组的酸价低,过氧化值高而丙二醛含量也高,说明硫酸亚铁组处于氧化中期。富马酸亚铁组的酸价低、过氧化值低且丙二醛含量高,说明富马酸亚铁组处于氧化酸败后期。为避免油脂氧化,建议在预混料配制时优先选择甘氨酸铁为微量元素原料,其次是硫酸亚铁,尽量不用富马酸亚铁。Metallic elements can promote the oxidation of oil,which could cause rancidity of feed.In this experiment,three kinds of microelement raw materials,namelyferrous sulfate,ferrous fumarate and iron glycine,which are commonly used in livestock and poultry feed,were selected to simulate the addition of oil and trace elements in 8%piglets premix in commercial production.The ratio of three kinds of iron ions to soybean oil was set at 91000.After emulsification,the three kinds of iron ions were mixed with soybean oil.Under the conditions of high temperature and high humidity in summer in Guangdong,the mixed oil was stored in the conditions of avoiding light and sealing for 0 d,10 d,20 d,30 d,40 d,50 d and 60 d,and the acid value,iodine value,peroxide value and malondialdehyde content of each treatment group were detected.A total of 4 treatment groups were set as control groups:No iron ions were added to soybean oil;Ferrous sulfate group:100 g of soybean oil was added with 2.45 g of ferrous sulfatemonohydrate;Ferrous fumarate group:100 g soybean oil with 2.73 g ferrous fumarate,Iron glycine group:100 g soybean oil with 3.28 g iron glycine.Each treatment was repeated 3 times for a trial period of 60 days.The results showed that with the prolongation of storage time,the acid value of the three iron groups changed little,the malondialdehyde content increased significantly,the iodine value decreased significantly,and the peroxide value increased firstly and then decreased.In the 60 d storage period,the acid value of the iron glycinate group was lower,the peroxide value was higher,and the malondialdehyde content was lower,indicating that the iron glycinate group was still in the initial stage of lipid oxidation.The lower acid value,higher peroxide value and malondialdehyde content of ferrous sulfate group indicated that ferrous sulfate group was in the middle oxidation stage.The lower acid value and peroxidation value,higher malondialdehyde content in ferrous fumarate group indicated that ferrous fumarate group was in the
