摘  要:目的了解榨菜中铝的来源和含量,为改进榨菜生产工艺和国家相关部门制定食品标准提供一定依据。方法在本市榨菜主要产区黄家埠、临山、泗门、小曹娥4个乡镇采集相关样品,采用GB 5009.182—2017第一法分光光度法检测铝含量,SPSS 23.0软件进行平均值、中位数等统计分析。结果共采集相关样品138份(土壤19份、环境水19份、鲜榨菜38份、腌制后榨菜头16份、小包装榨菜30份、加工用水8份、调料8份)。成品榨菜铝含量为2.99 mg/kg^7.97 mg/kg,中位值为5.48 mg/kg,平均值为5.25 mg/kg±1.51 mg/kg。土壤铝含量与榨菜铝含量差异有统计学意义(P<0.05)。结论余姚市榨菜中铝含量较低,健康风险较低。Objective To understand the source and content of aluminum in mustard,so as to provide basis for improving the production process of mustard and for the establishment of food standards by relevant national departments.Methods The relevant samples were collected from four townships of Huangjiabu,Linshan,Simen and Xiaocaoe in the main producing areas of the city.The determination of Aluminum Content were conducted by pectrophotometry according to GB 5009.182—2017.SPSS 23.0 Software was used for the statistical analysis of mean and median.Results A total of 138 samples were collected(19 for soil,19 for environmental water,38 for fresh mustard,16 for pickled mustard,30 for small packaged mustard,8 for processed water and 8 for seasoning).The aluminum content in the finished mustard ranged from 2.99 mg/kg to 7.97 mg/kg.The median value is 5.48 mg/kg,with an average of 5.25 mg/kg±1.51 mg/kg.The difference between the aluminum content of soil and the aluminum content of mustard was statistically significant(P<0.05).Conclusion Mustard in Yuyao City has low aluminum content and low health risk.
