摘  要:蒸汽爆破技术是一种新兴的原料预处理方式,主要通过高温高压蒸汽瞬间释压破坏细胞壁结构,以促进植物活性成分的释放,该技术绿色、环保且高效。近几年蒸汽爆破技术在国内发展迅速,在农业和食品领域的应用越来越广泛,该技术的研究对农业和食品资源的开发意义较大。本文综述了汽爆过程中的物理化学变化,以及在果蔬加工、废弃物改性、谷物粮食加工、中药提取等领域中的应用,以期为该技术在食品领域的广泛应用提供参考。Steam explosion technology is an emerging raw material pretreatment method.It can destroy the cell wall structure by releasing pressure instantaneously to promote the release of plant active ingredients.It’s a green and efficient technology.In recent years,this technology has developed rapidly in China and has been applied more and more extensively in agriculture and food areas.The research on this technology is beneficial to the development of agricultural and food resources.This paper reviewed the steam explosion technology and its application in fruit and vegetable processing,waste modification,grain processing and traditional Chinese medicine extraction,in order to provide a valuable reference for the wider application of the technology in future food processing.
