摘 要:随着人们生活水平的提高,对食品的要求已经不仅仅满足于吃饱即可的状态,食品安全问题越来越受到人们的关注,食品安全检测成为了食品安全的重要保障,故而食品中微生物检测也成为其中重要的环节之一。怎样更好、更快、更准确地检测出致病微生物也成为社会关注和检测人员需要不断改进的重点。在众多致病菌检测方法中,聚合酶链式反应(PCR)技术随着现代科技的发展,以其灵敏度高、特异性和可靠性强且标本用量少、时效快等优势越来越明显,所以越来越多地被应用于多个领域。本文在PCR技术原理的基础上综述了PCR技术在某些食源性致病菌检测中的应用。With the improvement of people's living standards,people's requirements for food are not only satisfied with the state of being full,food safety issues are more and more concerned by people.Food safety detection has become an important guarantee of food safety,so microbiological detection in food has become one of the important procedures.How to detect the pathogenic microorganism better,faster and more accurately has become the focus of social attention and reguirements for detectors to improve it.With the development of modern science and technology,polymerase chain reaction(PCR)technology is more and more widely used in many fields because of its advantages such as high sensitivity,high specificity and reliability,small amount of sample and fast detection.This paper briefly reviews the application of PCR technology in the detection of some foodborne pathogens based on the principle of PCR technology.
