摘　　要：香榧是我国特有的经济树种,具有很好的营养价值和药用价值。香榧种仁含有丰富的油脂、蛋白质、维生素和矿物元素。同时香榧的假种皮也含有较多萜类化合物、挥发油、木质素类化合物和黄酮类化合物。该文就香榧种仁的成分分析及其营养评价、香榧假种皮的成分分析及其功能评价、香榧籽油超临界Co2萃取工艺及脂肪酸成分分析进行综述。Torreya grandis is economic species in China,with good nutritional value and medicinal value.Torreya grandis seeds are rich in fat,protein,vitamins and minerals.Meanwhile,Torreya grandis aril also contains more terpenoids,essential oil,lignin compounds and flavonoids.This study has a summary about the component of Torreya grandis seeds and nutritional evaluation,the component of Torreya grandis aril and functional assessment,supercritical carbon dioxide extraction of Torreya grandis seed oil and analysis of the fatty acid.
