摘 要:通过对稻谷和谷外糙米在相同储藏条件下的品质变化对比分析,研究谷外糙米对籼稻谷质量品质的影响。结果表明,相同储藏条件下的谷外糙米较之籼稻谷品质劣变速度更快,谷外糙米含量0~4.0%时,各质量卫生指标差异不大,谷外糙米对籼稻谷质量无显著影响;当谷外糙米含量>4.0%时,谷外糙米对籼稻谷脂肪酸值及AFTB1有显著影响。根据研究结果,提出控制谷外糙米产生的措施和方法,同时对现有稻谷国家质量标准中谷外糙米含量提出了修改建议。Through a comparative analysis of the quality changes of rice and husked rice in paddy under the same storage conditions, we research the impact of husked rice in paddy on the quality of indica rice. In the result of research, the quality of husked rice in paddy deteriorates faster than that of indica rice under the same storage conditions. When the content of husked rice in paddy is 0-4.0%, the quality and health indicators have few difference, which denotes husked rice in paddy hardly impact on indica rice;When the content of husked rice in paddy is > 4.0%, it has a significant effect on the fatty acid value and AFTB1 of indica rice. Based on the result of the research, we propose measures and methods to control the production of husked rice in paddy, as well as amendments to the content of husked rice in paddy in the current national rice quality standards.
