摘 要:研究农产品中不同含量的蛋白质、脂肪酸、维生素和水分对低温射频等离子体降解黄曲霉毒素B1的影响。结果表明,在低温射频等离子体功率100~500 W处理10 min的条件下,添加蛋白质或者脂肪酸的实验组,AFTB1的降解率下降,且添加的浓度越高AFTB1的降解率就越低;添加VE成分后,AFB1的降解率先高后低;提高水分含量后,促进了AFB1的降解;而在含有蛋白质、脂肪酸和VE混合体系中,经低温射频等离子体功率400 W处理10 min,AFB1降解率可以达到83.2%,具有促进降解的效果。In this experiment,the effects of different contents of protein,fatty acid,vitamin and water in agricultural products on the degradation of aflatoxin B1 by low temperature radio frequency plasma were simulated.The results showed that the degradation rate of AFTB1 decreased in the experimental group treated with protein or fatty acid under the condition of low temperature radio frequency plasma power of 100~500 W for 10 min.And the higher the concentration of the added substance,the lower the degradation rate of AFTB1.The degradation of AFTB1 was first high and then low when VE was added.The degradation of AFTB1 was promoted by increasing water content.In the mixture of protein,fatty acid and VE,the degradation rate of AFTB1 can reach 83.2%under the condition of low temperature radio frequency plasma power 400 W for 10 min,which has the effect of promoting degradation.
