觅江南佳馔:多源古今文本数据融合的沪上饮食图谱构建

摘　　要：上海饮食经历了由江南水乡到开埠兼容的变化,随着大都市形象的建立,饮食文化对于城市旅游经济与文化认同都起到重要作用。文章通过多源数据,从官方与非官方角度--结合上海传统官修地方志以及游客札记文本《沪游杂记》,以及从古今角度--地方志史料与"下厨房"互联网数据,将上海晚近到现代百年来的食谱特征予以呈现,从食材、菜品与品牌3个维度,以网络图谱的方式,追根溯源上海菜品与食材的历史脉络,提供了一种融合关联古今文本的思路。Shanghai’s cuisine has undergone major changes in parallel with the city’s modernization from a Jiangnan water township to a large commercial metropolis.With the establishment of a metropolitan image,food plays an important role in urban tourism economy and cultural identity.Through data from multiple sources,and from official and unofficial points of view,which include local histories,tourist notes like "Shanghai Travel Miscellany",and data on the Internet,a network cuisine map presenting recipes centering on Shanghai in the last hundred years is created.This map also traces the origins of Shanghai cuisine and its ingredients.
