摘  要:试验以Bb12的活菌数变化为评价指标,对嗜热链球菌MN-ZLW-002促Bb12生长作用进行了研究。结果表明,在MRS液体培养基中,MN-ZLW-002对Bb12的增殖产生了显著的促进作用(P<0.05)。在发酵乳中,当MN-ZLW-002与Bb12按活菌数1∶1000复配参与发酵时,酸奶的发酵特征不受影响、组织状态和口感略有提升,且双歧杆菌活菌数显著提高(P<0.05)。试验从发酵过程中培养基溶氧值变化的角度初步探索了MN-ZLW-002菌株对酸奶中Bb12的促生长作用机理。结果表明,MN-ZLW-002能够加速培养基中氧气含量的降低,使培养基较快的达到有利于Bb12生长的厌氧条件。同时,通过对比观察Bb12菌株在胞外多糖-MRS液体培养基及普通MRS液体培养基中的生长情况,从MN-ZLW-002胞外多糖的角度研究了嗜热链球菌MN-ZLW-002促Bb12生长的机理。结果表明,嗜热链球菌MN-ZLW-002还可以通过发酵代谢产生的胞外多糖对乳双歧杆菌Bb12产生促生长作用。The effect of streptococcus thermophilus MN-ZLW-002 on the growth of Bb12 was studied with the change of the number of Bb12 as the evaluation index.The results showed that MN-ZLW-002 significantly promoted the proliferation of Bb12 in MRS liquid medium(P<0.05).In fermented milk,when Bb12 was mixed with MN-ZLW-002 for fermentation according to the number of live bacteria of 1:1000,the fermentation characteristics of yogurt were not affected,the tissue state and taste were slightly improved,and the number of live bacteria of bifidobacterium was significantly increased(P<0.05).The growth promoting mechanism of MN-ZLW-002 strain on Bb12 in yoghurt was preliminarily explored from the perspective of the change of medium dissolved oxygen value during fermentation.The results showed that MN-ZLW-002 could accelerate the reduction of oxygen content in the medium,so that the medium could quickly reach the anaerobic conditions conducive,thus promoting the growth of Bb12.At the same time,by comparing the growth of Bb12 in EPS-MRS liquid medium and ordinary MRS liquid medium,the mechanism of promoting the growth of Bb12 by MN-ZLW-002 was studied from the perspective of EPS produced by MN-ZLW-002.The results showed that streptococcus thermophilus MN-ZLW-002 could also promote the growth of bifidobacterium lactobacillus Bb12 by the EPS produced by fermentation metabolism.
