摘  要:目的分析新乡市即食食品微生物污染现状,评估食品风险,为政府相关部门采取必要的监管措施提供基础数据。方法在新乡市市区及其周边8个县(市)选择购物广场、超市、农贸市场、小吃快餐店、零售食品加工店和线上购物店等场所,按照《河南省食品安全风险监测方案》进行监测与分析。结果 2017年、2018年共检测样品404份,其中41份样品不合格,不合格率为10.1%;共检出11株致病菌,检出率为2.7%,其中蜡样芽胞杆菌检出率最高,为12.5%;卫生指标菌检测发现,大肠菌群计数的不合格率最高,为17.3%,其次是菌落总数,不合格率为13.1%,大肠埃希氏菌不合格率最低,为11.6%;散装食品不合格率(13.5%)显著高于预包装食品(4.1%),差异有统计学意义。结论 2018年食品的卫生状况较2017年未发现明显改善,只有致病菌检出率降低。因此,有关部门的治理和整改要继续加强,应完善食品加工和销售过程中的监督与管理。OBJECTIVE To monitor the microbial contamination of ready-to-eat food in Xinxiang city and analyze the influencing fac⁃tors of microbial contamination so as to provide references for food safety supervision in Xinxiang City.METHODS According to Food Safety and Risk Monitoring Program in Henan Province,it conducted supervillains and analysis on the sampling locations from 8 counties in Xinxiang District,including supermarkets,fast food restaurants,school canteens,public places,street stalls and fixed stalls.RESULTS 41 strains of bacteria were detected in 404 samples,and the unqualified rate was the 10.1%.11 strains of pathogenic bacteria were detected,the detection rate was 2.7%.The highest detection rate of Bacillus cereus was 12.5%;in the detection of health indicator bacteria,the unqualified rate of coliform count was the highest(17.3%),followed by the total number of colonies,the unqualified rate was 13.1%.The unqualified rate of Escherichia coli was the lowest(11.6%);the unqualified rate of bulk food(13.5%)was significantly higher than prepackaged food(4.1%),the difference was statistically significant.CONCLUSION Compared with 2017,the hygiene status of food in 2018 was not significantly improved,but the detection rate of pathogenic bacteria was re⁃duced.The management and rectification should be strengthened to improve the supervision and management in the management of food processing and sales.
