摘　　要：紫甘薯是一种旋花科一年生草本植物,花色苷丰富,花青素又称花色素,是一种水溶性天然色素,紫甘薯花青素作为一种新型的天然色素,具有抗衰老的功能。本文主要介绍了紫甘薯中花色苷的提取、分离纯化及其功能应用,为进一步开发和应用紫薯提供了理论依据。Purple sweet potato is an annual herb of convolvulaceae,which is rich in anthocyanin.Anthocyanin,also known as anthocyanin,is a water-soluble natural pigment.As a new kind of natural pigment,purple sweet potato anthocyanin has the functions of antioxidation,anti-aging and protecting eyesight.In this paper,the extraction method,separation and purification of anthocyanin from purple sweet potato and its functional application were mainly described,which provided the theoretical basis for the further development and application of purple sweet potato pigment.
