摘 要:目的了解养殖销售环节中水产品致病性弧菌的污染状况及病原特征,为更好地预防水产品引起食源性疾病提供科学依据。方法参照GB 4789.7—2013及《国家食品污染和有害因素风险工作手册》进行致病性弧菌检测,并进行药物敏感性试验、毒力基因检测及脉冲场凝胶电泳(PFGE)分子分型。结果养殖场所、农贸市场及大型超市3个采样环节共采集346件样品,检出5种致病性弧菌139株,阳性率为40.2%,其中副溶血性弧菌和霍乱弧菌在3个环节中阳性率差异均有统计学意义(P<0.05)。副溶血性弧菌的毒力基因tlh阳性率为100.0%,trh阳性率为4.2%,tdh阳性率为0.0%,对头孢唑林和氨苄西林耐药;霍乱弧菌都是非O1/O139型,不含毒力基因Ctx,大部分抗生素不同程度耐药。PFGE分子分型结果显示副溶血性弧菌有多个PFGE型别,部分具有同源性。结论上海市松江区水产品中致病性弧菌呈多元污染,且耐药严重,型别多样,为食品安全风险监测提供理论依据。Objective To study the pollution levels and pathogen characteristics of pathogenic Vibrio in aquaculture and sales,so as to provide scientific basis for better prevention of foodborne diseases caused by aquatic products.Methods Vibrio detection was conducted according to GB 4789.7—2013 and the Manual for China National Food Contamination and Harmful Factors Risk Monitoring,and subjected to antimicrobial susceptibility testing,virulence gene detection and PFGE molecular typing.Results A total of 139 positive strains were isolated from 346 samples including farmer’s markets,supermarket and aquaculture farm,and the positive rates was 40.2%.The positive rates of Vibrio parahaemolyticus and Vibrio cholerae in the three stages were statistically significant(P<0.05).The positive rate of virulence gene tlh of Vibrio parahaemolyticus was 100.0%,trh was 4.2%,tdh was 0.0%,and cefazolin and ampicillin were resistant.Vibrio cholerae are of non-O1/O139 type and do not contain virulence gene Ctx.Most antibiotics are resistant to different degrees.PFGE molecular typing results showed that there were multiple PFGE types of Vibrio parahaemolyticus,some of which were homologous.Conclusion The pathogenic vibrio in the aquatic products in Songjiang District of Shanghai showed multiple contamination,serious drug resistance and various types,which provided the theoretical basis for food safety risk monitoring.
