摘 要:目的:检测南宁市售螺蛳粉中亚硝酸盐的含量,探讨螺蛳粉的食用安全性。方法:在南宁市5个区的螺蛳粉店进行随机采样31份,用盐酸萘乙二胺法检测螺蛳粉中亚硝酸盐含量。结果:螺蛳粉汤汁、配菜、粉、一份粉中亚硝酸盐含量均值分别为1.315 mg·kg^-1、2.825 mg·kg^-1、8.016 mg·kg^-1、12.155 mg·kg^-1,有5家螺蛳粉样品亚硝酸盐含量超标,超标率为16.13%;西乡塘区、邕宁区抽样的螺蛳粉中亚硝酸盐含量高于其他城区亚硝酸盐含量(P<0.05);配菜中的亚硝盐含量高于粉、汤中的亚硝酸盐含量(P<0.05)。结论:南宁市售螺蛳粉中亚硝酸盐的含量符合标准,螺蛳粉中亚硝酸盐主要来源于配菜中,仍需加强对地方特色美食的卫生监督管理。Objective:To detect the nitrite content in snails rice noodle sold in Nanning and assess its safety performance.Methods:31 samples selected in restaurants from five districts in Nanning were detected of nitrite content by naphthalene ethylenediamine hydrochloride method.Results:The average nitrite contents in soup,side dishes,rice noodle and a whole serving are 1.315 mg·kg^-1,2.825 mg·kg^-1,8.016mg·kg^-1 and 12.155 mg·kg^-1,which five the standard accounting for 16.13%.The nitrite contents in Xixiangtang district and Yongning district were higher than those in other districts(P<0.05),and the nitrite contents in side dishes were higher than those in rice noodle and soup(P<0.05).Conclusions:The content of nitrite in snail powder in Nanning is in line with the standard.The nitrite in snail powder mainly comes from the side dishes.It is still necessary to strengthen the health supervision and management of local characteristic food.
