摘 要:以宁夏贺兰山东麓酿酒葡萄“梅鹿辄”为研究对象,在葡萄果实软化期到成熟期,采用不同遮光率(40%、50%、60%)的遮光网(以露地自然光照栽培为对照)进行遮光处理,研究光照条件对酿酒葡萄品质成分的影响。结果表明:在整个成熟期内,葡萄果实可溶性固性物和还原糖持续上升,酸度逐渐降低;不同遮光处理下,花色素苷变化受光照影响最大,其次为总酚和单宁;随着光照强度的降低可溶性固形物、还原糖和花色素苷的量均下降,40%遮光相比对照分别下降了7.54%、4.46%和19.33%,而酸度增高,增幅为8.7%;遮光对葡萄总酚和单宁也有显著影响,其中40%遮光总酚和单宁的质量比最高,并显著高于其他处理,分别比对照上升9.74%和8.8%;遮光栽培能显著影响“梅鹿辄”果实品质,在宁夏贺兰山东麓适度地降低光照强度可提升葡萄果实的酿酒品质。In order to study the quality of Merlot wine grape responding to the light intensity,the study with four light intensities(shading 40%,50%,60%and no shading as control group)was conducted in the eastern Helan Mountain,Ningxia and the shading treatments lasted from the fruit softening phase to the maturation phase.The results showed that during the entire maturation phase,the contents of soluble solid and reducing sugar in the grape increased,but the acidity decreased gradually.The anthocyanin content was affected by lighting intensities dramatically,followed by total phenols and tannin.The contents of soluble solid,reducing sugar and anthocyanin decreased with the decrease of light intensity,their contents in the 40%shading group decreased by 7.54%,4.46%and 19.33%respectively compared to the control group,but the acidity increased by 8.7%.In addition,the weak light intensity also had a significant influence on the contents of total phenols and tannin,the contents of total phenols and tannin were the highest in the 40%shading group,which were 9.74%and 8.8%higher than those in the control group.Decreasing light intensity can improve the quality of Merlot wine grape,which means that moderate reduction in light intensity in the eastern Helan Mountain might improve the brewing quality of the grape.
