宋代餐饮业的兴盛及其原因分析

摘  要:宋代餐饮业已经有酒食兼营、固定专营以及流动经营等不同的经营方式。其经营的食品种类繁多,且时令性强。彼时食肆的经营规模大,经营时间长,注重店面装饰,甚至已承接皇宫大内的供餐,并出现了餐饮与旅游相结合的趋势。宋代餐饮业的兴盛显然受文人风尚的影响,而其本身更已成为宋代社会生活中不可或缺的一部分。宋代内部环境的相对安定,城市的发展与市民阶层的形成,商业、娱乐业的繁荣与宋代官府相应的管理措施,城市的区位条件等诸多方面,则均与宋代餐饮业的兴盛关系密切。The prosperity of catering industry in Song Dynasty was the concrete manifestation of the social environment and economic development.The catering industry in Song Dynasty had different operation modes,such as hotel concurrent operation,fixed franchise and mobile operation.It provided a large variety of food,which was highly seasonal.At that time,restaurants were characterized by large scales and long business hours.The restaurants paid attention to the decoration of the storefront,and even had the orders from the Imperial Palace.There was a trend of combining meals with tourism.The catering industry in Song Dynasty was obviously influenced by the literati fashion,and it had become an indispensable part of social life.Among other things,the relative stability of the internal environment,the development of cities and the rising of citizen class,the prosperity of commerce and the corresponding management measures,the geographical conditions of cities and the influence of the royal family all contributed to the prosperity of catering industry in Song Dynasty.
