摘 要:以文冠果油粕为原料,采用改良Osborne法分级分离醇溶蛋白、谷蛋白、球蛋白和清蛋白,然后用木瓜蛋白酶分别进行酶解并分离酶解产物中的活性肽,最后依次测定4种蛋白酶解产物不同分子量组分对DPPH·和·OH的清除能力,以此对文冠果油粕4种蛋白酶解产物中活性肽的抗氧化性做出评价。结果表明,文冠果油粕粗蛋白含量为37.45%,改良Osborne法分级分离4种蛋白,谷蛋白、球蛋白、醇溶蛋白、清蛋白提取率依次为53.87%,3.88%,17.65%,3.88%;清蛋白酶解产物分子量<5 kDa的组分对DPPH·的清除率达64.81%,球蛋白酶解产物相对分子量<5 kDa的组分对·OH的清除率可达75%。The proteins of Xanthoceras sorbifolia Bunge were hydrolyzed by four fractionations:prolamin,glutelin,globulin and albumin,isolated by the method of the modified Osborne method,followed by the enzymolysis of papain,then the active peptides were fractionated.Next the scavenging ability of different proteolytic products with different molecular weight components to DPPH·and·OH was used to evaluate the antioxidant activity of active peptides in four proteolytic products.The crude protein content was 37.45%and the extraction rates of glutenin,globulin,gliadin,and albumin were 53.87%,3.88%,17.65%,and 3.88%,respectively.The scavening rate of fractions relative molecular weight<5 kDa of enzymatic hydrolysates of albumin against DPPH·were greated than others,up to 64.81%.The scavening rate of fractions relative molecular weight<5 kDa of enzymatic hydrolysates of globulin against·OH were up to 75%.
