摘  要:突如其来的新冠肺炎疫情,对食品类专业人才提出了新的要求。“食品贮藏与保鲜”作为食品类专业的选修课程,在人才培养体系中起着必不可少的作用。该文从调整教学内容、丰富教学手段和强化教师素质三方面对疫情背景下“食品贮藏与保鲜”课程教学进行了相应的探索与实践,以期提升该课程的教学质量,培养出响应“停课不停学”号召的综合性食品类专业人才。Under the background of epidemic of sudden outbreak,new requirements are put forward for food professionals."Food Storage and Preservation",as an elective course for food majors,plays an essential role in the talent training system.In this paper,exploration and practice were carried out on teaching content,teaching methods and strengthening the quality of teachers of"Food Storage and Preservation"course during the special period,in order to improve the teaching quality of the course,and to cultivate comprehensive food professionals meeting the current needs of suspending classes without stopping learning.
