摘　　要：为双孢菇生产和精深加工企业选择生产菌株的选择及其产业发展提供科学依据,测定国内外12个双孢菇菌株子实体的蛋白质、脂肪、多糖、粗纤维及游离氨基酸的含量和组成,并利用雷达图对双孢菇菌株5个营养指标进行综合分析,评价国内外主栽双孢菇菌株的营养价值。结果表明:5113菌株的蛋白质和脂肪含量最高,分别为35.15%和4.54%;XXX菌株的多糖和游离氨基酸含量最高,分别为63.51g/kg和8.14%;H901菌株粗纤维含量最高,为45.42%。5113菌株子实体的营养价值最高,综合评分为135分。In order to provide the scientific basis for selecting strains for A.bisporus production and deep-processing enterprise and its industrial development,the content and composition of protein,fat,polysaccharide,crude fiber and free amino acid in 12 A.bisporus strain fruitbodies at home and abroad are determined and compared,and then five nutritional indexes of A.bisporus strains are analyzed comprehensively by using radar map to evaluate nutritional value of main A.bisporus strains at home and abroad.Result:The protein and fat content of 5113 strain is the highest,respectively 35.15%and4.54%.The polysaccharide and free amino acid content of XXX strain is the highest,respectively 63.51 g/kg and 8.14%.The crude fiber content of H901 is the highest of 45.42%.The nutritional value of 5113 strain fruitbody is the highest and the comprehensive score is 135.
