摘 要:为研究投喂肉质改良饲料对斑点叉尾鮰生长性能、肌肉品质和抗氧化能力的影响,本试验选取初始体重为(605.41±2.91)g,初始体长(39.91±0.33)cm健康斑点叉尾鮰180尾,随机分为3组,每组3个重复,每个重复20尾鱼,分别投喂配合饲料(Z1组),以蚕豆为主的配合饲料(Z2组),蚕豆为主添加4%杜仲和0.01%大蒜素的配合饲料(Z3组)。饲养75 d后测定生长性能指标及抗氧化能力。结果表明:与对照组相比,肉质改良饲料对增重率和饵料系数影响不大(P>0.05)。肉质改良饲料能显著提高背部肌肉胶原蛋白含量,其中Z2组达到最大值,Z3组次之(P<0.05);能显著提高背部生肌肉硬度、胶着度和咀嚼度,且最大值均出现在Z2组,Z3组次之,分别比Z1组提高了26.65%、20.84%、9.6%(Z2组)、19.88%、9.6%、2.42%(Z3组)(P<0.05);Z2和Z3组肌纤维直径比对照组分别降低了29.5%和18.4%(P<0.05)。肉质改良饲料组能显著提高斑点叉尾鮰超氧化物歧化酶(SOD)、过氧化氢酶(CAT)和谷胱甘肽过氧化物酶(GSH-Px)活性,显著降低丙二醛(MDA)含量。可见,投喂肉质改良饲料可以有效改善斑点叉尾鮰肌肉品质,提高抗氧化能力,但对生长性能影响不大。This experiment was conducted to investigate the effects of feed muscle quality improved diets on growth performance,muscle quality and antioxidant ability of Ictalurus punctatus Rafinesque.A total of 180 healthy Ictalurus-punctatus Rafinesque with the initial boby weight of(605.41±2.91)g,and initial body length of(39.91±0.33)cm were selected,and then randomly divided into 3 groups with three replicates per group and 20 fish per-replicate.The Z1,Z2,Z3 groups were fed common compound feed,broad bean-based compound feed,broad beans with 4%eucommia ulmoides and 0.01%allicin compound feed.The trial period was 75 day.The results showed that compared with the control group,the weight gain rate and feed coeffcient of muscle quality improved diets groups not significant change(P>0.05).The collagen content of the back muscles of muscle quality improved diets groups increased significantly,with the maximum in the Z2 group and the second in the Z3 group(P<0.05);The maximum of muscle hardness and chewiness in the back of fish achieved in the Z2 group(P<0.05),and the Z3 group was the second(P<0.05),which was 26.65%,20.84%,9.6%(Z2),19.88%,9.6%,2.42%(Z3)higher than that of Z1 group.The maximum of adhesiveness appeared in the Z2 and Z3 groups(P<0.05),which was 29.5%and 18.4%higher than that of Z1 group.The muscle quality improved diets could improve the activities of superoxide dismutase(SOD),catalase(CAT),glutathione peroxidase(GSH-Px),and malondialdehyde(MDA)content decreased obviously.It indicated that muscle quality improved diets could effectively improve muscle quality and antioxidant ability of Ictalurus punctatus for long-term feeding,but in the same time cause little effect on growth performance.
